pizza icon to torture myself
I just made curried stir-fried potatoes and they were yummy. I'm proud of myself. But please tell me that cooking becomes faster with practice, because the recipe time was 20 minutes and it took me an hour just to chop and mince the potatoes/onion/cilantro.

Um...sure? Better technique can make things go more quickly, but overall I think cooking does take time. There are lots of ingredients that when fresh, can be prepared super simply and in time efficient way.

But overall this is my main complaint about the slow food movement and how to convince people to cook more, rather than rely on convenience foods/microwaves, because there is no getting around that it takes *TIME*, cooking is not *hard* but when you factor shopping, meal planning, prep, and cooking, yes it's time consuming, and in this culture some people especially those who make low wages/work long hours, they simply don't have the time/energy to do it, even if they DID have the skills.

You just have to get to a point where you're like yeah cooking my own fresh food, is valuable in and of itself and time will spent, cause it pays dividends to your health and taste buds.

Okay that was a little more preachy than I intended. Heh.

Oh and just as an aside, in terms of chopping/prepping? This is why restaurants generally hire a whole separate staff just to do prep. Hours and HOURS are spent in the morning just prepping ingredients for the line.

Oh believe me, I know. Jesse will soon be moving to being the prep/morning chef (which means he will have normal people hours and I'll SEE HIM!) and it's *insane* how much time is needed just to chop stuff. And people said eating more veggies/fruit would be better!

Of course, in addition to cooking being both healthful and tasty, it's also kind to my wallet!

Heeee, no that's fine. I *am* enjoying it and patting myself on the back for creating four meals in two weeks. I think maybe the thing to do is concentrate on making large portions of yummy, well-balanced meals so I only have to cook a few times a week, and just enjoy leftovers and raw fruit the rest of the days.

This is where Jesse's expertise really comes in handy. He knows how to make food last by changing it up. Chicken is still good, hasn't gone bad yet, but isn't as delicious as it was when it was first cooked? Now it's chicken salad!
